Chicken Hominy
How we get from corn to hominy is the process of nixtamalization. The short version is to let dried corn kernels soak in an alkaline solution (lime or wood ash). This will remove the tough outer hull, making niacin (Vitamin B3) and calcium bioavailable. The holidays can bring out the best in us. I will focus on my best cookie baking lesson with the grandkids. We tried to make gingerbread cookies but they did not have that distinct flavor, regardless, all the cookies are gone and Santa has not visited yet. The secret to success was in that order of; measuring, mixing, rolling out dough, cutting shapes, baking, decorating and finally eating. It was a real treat and a boatload of fun.
