Packed with protein, an easy, healthy, low-sugar cottage cheese breakfast or dessert.
Cottage cheese is made by adding an acid (vinegar or probiotic culture) to milk. This separates the solids (curds) from the liquid (whey). Curds are then cut into smaller pieces.
A ½-cup serving of 2% fat cottage cheese (not low-sodium) contains approximately:
85 calories
4 grams carbohydrates (as the natural milk sugar lactose, and 0 grams added sugars)
11 grams protein
2.5 grams total fat
1.3 grams saturated fat
18% daily value (DV) sodium
2% DV potassium
8% DV calcium
Other essential vitamins and minerals including phosphorus, magnesium and vitamin B12. (Academy of Nutrition and Dietetics, see citation page for more info.)
Ingredients:
16 oz 2% cottage cheese (small curds)
6 oz raspberries or blackberries
3 tablespoons honey
dash of cinnamon
Extra blackberries and slices of apples to decorate the top.
Steps:
Blend cottage cheese, raspberries, honey until smooth.
Fill 2 - 3 dessert bowls or glasses (I used two.)
Decorate with additional fruit and a dash of cinnamon.
Total preparation time = 15 minutes
Total cost $2.48 + $2.97 = $5.45 cottage cheese and raspberries
(Due to bulk purchase, no cost assigned to honey.)
