Warm Potato Salad

Known by its scientific name solanum tuberosum, and to a layperson like myself as tater, tuber, or spud, the potato is a member of the nighshade vegetable family. Whether you like it baked, boiled, fried, roasted, mashed, as salad, or au gratin, it can track its roots back to the Western Titicaca Basin area which is located in the Andes mountains of Peru. Here traces of tuber consumption were found as early as 3,400 BC - 2,200 BC years ago. The powerful poato packs 'resistant starch', a carbohydrate that refuses to digest in the small intestine because it rather ferment in the large intestines to feed healty gut bacteria. Potatoes are also packed with vitamins, potassium, protein, fiber, and iron of which some is in the skin and some in the flesh. (Info retrieved from various sources is on the citation page).

Today, I am making "Southern German Warm Potato Salad."


Ingredients

2 pound bag firm potatoes (I prefer yellow, red potatoes will work also.)

1/2 small onion, chopped (My favorite for this dish is red onion.)

1 tsp oil to cook onions in

1 TBS vinegar (for the dressing)

1 1/2 TBS oil (for the dressing)

1/4 tsp salt (for the dressing)

1 1/2 tsp dry broth (mix with 1 cup of very hot water)

1/2 seedless cucumber


Steps

Cook potatoes with skin on.

While potatoes are cooking, sauté onions and thinly slice cucumber; set aside.

Prepare salad dressing with vinegar, oil, and salt. Add onions and cucumber.

Peel cooled potatoes and thinly slice.

Add potatoes to salad dressing, cucumber, and onion. Mix lightly.

Prepare broth mix (stir well) and pour into potato salad. Mix lightly again. Let stand for 30 minutes before eating. The broth will be mostly soaked up by the potato mix and add flavor to the dressing. Garnish with parsley or egg. Guten Appetite

Personally, I like the benefits of using this recipe because it does not contain eggs and mayonnaise.
