Baked Cornish Hen with Cornbread Dressing (2)
It's smallness makes the Cornish hen a serving for one person.
Cornbread Dressing
Ingredients:
1 x 6 oz cornbread mix (I used Morrisons)
1 x egg
2/3 cup of milk
Bake cornbread according to package instructions. While cornbread is being, prepare dressing veggies.
2 x jalapeno peppers, de-seeded and diced.
1/3 red onion, chopped
1/2 red (or other) bell pepper, diced
2 glove garlic, diced
1 stalk celery sliced and diced
2 TBS oil
Heat oil in skillet, add all veggies and cook on medium heat until done.
Crumble corn bread, add all cooked veggies, mix well. Add seasonings;
1/2 tsp salt
2 tsp sage
3/4 cup broth - MIX ALL INGREDIENTS - set aside.
Cornish Hen
Steps:
If Cornish hen are frozen, soak in cool water to defrost. Remove any giblets. Rub approximately 1/2 tsp of salt inside the Cornish hen.
Loosely pack a few TBS of dressing into the hen cavity, cover Cornish with all foil and bake in pre-warmed oven at 350 degrees.
After about 1 hour and 15 minutes, remove alu foil, place remaining dressing around the bird (if dressing seems too dry, add 1/2 cup broth), brush butter over the hens and bake for an additional 1 hour or until Cornish hen skin browned.
