Valentine's Cookies

RECIPE INGREDIENTS

1 cup avocado oil

1/2 cup brown sugar

1 egg

3 cups flour (Almond flour is an acceptable substitute, I used half regular and half almond flour.)

3/4 tsp. salt

1 1/2 tsp. baking powder

1 1/2 tsp. cardamom


Icing Ingredients: powdered sugar, beetroot juice

Beets are a natural way to color foods red or pink. Instead of artificial food coloring, I've opted to add a few tablespoons of beetroot juice to the icing for a natural pink to decorate my cookies.


STEPS

Measure flour, baking powder, salt and cardamom in a bowl and mix.

In second bowl, cream avocado oil with 1/2 cup of sugar, add egg and mix some more.

Add half of the flour mix to the creamed oil mix, then add the rest.

Roll out dough on floured surface (If sticky, add flour to the roller and the dough.)

Dough should be rolled out to 1/8 in. thickness.

Cut out cookies and bake at 350 degrees for 15 minutes.

Apply icing to cooled cookies.
