Orange Cranberry Bread

Cranberry is a shrub that grows mostly in the Northeastern part of North America. Cranberries have a long history of healing effects. Native Americans used cranberry fruits and leaves for bladder, stomach, blood and liver disorders. There is some evidence that cranberries might be useful in preventing UTI's. In addition to vitamins C, E, and K1, cranberries also include manganese and copper. Cranberry juice is tart and usually combined with other fruit juices.

INGREDIENTS
3 cups of flour
1 cup of butter (2 sticks), softened in micro (Can use avocado oil as a substitute.)
4 eggs
2 1/2 tsp. of baking powder
1/2 cup of sugar
2/3 cups of orange juice (if using frozen orange juice, dilute with less water for a stronger orange flavor)
1 tsp. of vanilla flavoring
1/4 tsp. of salt
1 TBSP cardamom
1 cup cranberries
1 cup walnuts (or pecans)
STEPS:
Heat oven to 350 degree.
Spray or grease a square pan (9x13 will work)
Add flour, salt, and baking powder in a bowl, mix.
Cream softened butter or avocado oil with 1/2 cup sugar.
Add 2 eggs at a time and beat well.
Add last 2 eggs, vanilla, and mix well.
Bake in heated oven for 30 minutes.
Toothpick check if the cake is done.
Cool completely and sprinkle with a mixture of orange juice and powdered sugar.
