Bread Pudding

Bread pudding according to Wikipedia is a British invention dating back to the 11th century. Originally a recipe to repurpose stale and dry bread, today, it comes in many different variations with; cream, butter, eggs, fruit, nuts, rum-raisins, maple syrup, you name it. The list of ingredients used for breadpudding in regions around the world is endless. One recurring tasty topping is ice-cream. I like to make my bread pudding with little sugar, dried fruits and nuts.
Ingredients:
12 -14 oz loaf of French bread (cut into cubes)
1 cup dry cranberries
1 cup dry apricots (5.5 oz bag)
1/2 cup walnuts
1/3 cup sugar
3 cups milk (almond)
3 eggs
2 1/2 tsp cardamom
Steps:
Heat oven to 350 degrees (F)
Place bread cubes in 8 x11 pan
Add dry fruits, nuts and mix
Beat eggs, add to milk with sugar and cardamom.
Cover with foil.
Bake in oven for 50 minutes.
