Shrimp Fried Rice

"Pepe" (the king prawn from the muppets) is high in protein and low in fat. Shrimp seems like the perfect food, however, for cholesterol awareness, consume "Jacque" (from Nemo) only in moderation. We like the little scavenging crustaceans broiled, fried, and grilled but today they will be served sautéed with veggies and rice. https://health.clevelandclinic.org/is-shrimp-healthy
INGREDIENTS:
1 pound shrimp, peeled and deveined
1 cup of white or brown rice (cooked with 2 cups of water)
12 oz frozen mixed vegetables
1/4 cup olive oil
1/2 small onion sliced
3 clove garlic diced
1 tsp. seasoning salt
1 Tbsp. soy sauce
STEPS
Bring 2 cups of water, 1 cup of rice (white rice, brown rice takes longer) to a boil, turn down and simmer 15 minutes.
Heat the olive oil in a 12 in. skillet.
In one corner of the skillet sauté onion and garlic.
Sauté shrimp in the same skillet until shrimp turn orange (7-8 min.)
Add cooked rice, salt and mixed vegetables to the skillet.
Cook until vegetables are heated, then add soy sauce and stir until spread.
Add a little spicy kick to your shrimp fried rice with sriracha sauce on top..............Enjoy
