Orange Celery Chicken

A perfect match, the sweet, tangy orange with the slightly bitter celery creating a combination high in vitamin C from orang juice and vitamin K from celery. Eating celery makes your teeth work hard. INGREDIENTS:

1.5 lbs. chicken

1 bunch of celery, chopped into 1/4 in. pieces

4 Tbsp oil

1/3 cup flour

1.5 cups orange juice (I like to use 12 oz. frozen oj and dilute with only 2 containers to intensify the taste)

1/2 cup yoghurt


STEPS:

  1. Pre-heat oven to 350°F.

  2. Heat oil in skillet.

  3. Roll chicken in flour and place in the hot oil.

  4. After chicken is lightly browned, remove from skillet, set aside.

  5. Put the rest of the flour in the skillet to create a roux, stir constantly.

  6. When the flour is absorbed by the oil and light brown, add orange juice.

  7. Stir until thickened.

  8. Add yoghurt and stir.

  9. Add celery to the skillet, place chicken on top.

  10. Bake covered at 350°F for 30 minutes, season to taste with salt and pepper.
