Home Fries

Crispy on the outside and soft on the inside, home fries are a classic staple. I like to make enough to enjoy as a hearty breakfast the next morning.


Ingredients:

1 pound potatoes, peeled and sliced (my preference is yellow or red)

1/2 onion sliced

1 jalapeño sliced (or any chili pepper)

1/2 orange or yellow bell pepper

3-4 TBSP olive oil (depending on skillet size, the amount might vary)

salt, pepper, garlic to your liking

water


Steps:

  1. Heat oil on high, add potato, onion, jalapeño, bell pepper slices.

Season to your liking.

  1. Cook until potatoes are browned at the bottom of your skillet, turn over several times, keep browning.

  2. Begin by adding 1 cup of water to skillet (more might need to be added later).

  3. Turn heat to low, cover tightly, cook until potatoes are done.

  4. Remove skillet top, continue cooking until all excess liquid is gone and potatoes are browning again at the bottom of the skillet.


Enjoy any left over home fries for breakfast next morning with eggs, sausage or bacon.
